Wookey Hole Cave Aged Cheddar
Wookey Hole Cave Aged Farmhouse Cheddar is matured 200 feet underground in the Wookey Hole Caves in the Somerset Mendip Hills
The naturally constant temperature and humidity of the caves offer the ideal conditions for storing and maturing cheddar. The porous nature of the cheese enables it to take on distinctive earthy and nutty flavours from the surrounding atmosphere.
Produced by our friends at Ford Farm in Dorset, Cave Aged Farmhouse Cheddar is produced using the milk from local, grass-fed cows and has been awarded a PDO (Protected Designation of Origin). Each cheese is bandaged in cheese cloth and carried by hand into the caves for maturing.
This delicious cheddar is firm and cream-coloured. The aroma is a complex mix of sweet, creamy, farmy and earthy. The flavours are big, robust and well rounded with competing notes such as sweet and salty.
Please note that this cheese is not suitable for vegetarians as it uses traditional animal rennet.
